This meatloaf recipe with mustard, brown sugar and ketchup glaze, uses just a few basic ingredients and it is so easy to customize to you and your families tastes.
I was never really a big meatloaf fan growing up. And I was a mother and wife for years before I even made meatloaf myself. Some were good, some not so good. But after years of tweaking this and changing that and swapping those, I have this easy, delicious meatloaf recipe that my family loves. I just know you and your whole family are going to love it too! Make extra, as this tastes even better the next day! And this meatloaf recipe with mustard, brown sugar and ketchup glaze, is great for grilled cheese and meatloaf sandwiches!
This is just a basic, traditional meatloaf recipe using simple ingredients. As with all of my recipes, you can start with this and start addding things that you and your family likes to make it your own.

Some notes and tips before we begin
- Beat the egg before adding it to the ground beef. It makes it easier to mix in.
- Don’t skip adding the milk and breadcrumbs (or crackers) together first! This makes your meatloaf so moist! And it only takes a few minutes for them to absorb the milk
- Add any other seasonings you like! Garlic powder, italian seasoning, and dry mustard are just a few ideas.
- Not an onion fan? Omit them.
- Prefer green onions? Go ahead and use them.
- Like your meatloaf with green peppers? Add them.
- Try using ground pork instead of ground chuck or a mixture of pork and beef.
- Try doubling the tangy glaze on top of your meatloaf.
- Not a fan of tangy brown sugar glaze on meatloaf? Try using bbq sauce on top instead.
- Try dijon mustard or spicy mustard.
- Play around with the glaze ingredients. You may like more mustard. Or maybe more brown sugar. Maybe you prefer a tad bit more ketchup.
- You can use crackers in place of the breadcrumbs. Simply crush the crackers and add those to the milk instead of breadcrumbs.
- Store leftovers in airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave.
Now let’s get started making this delicious meatloaf recipe with mustard, brown sugar and ketchup glaze!
First, heat a little oil or butter in a skillet and saute your onions. Just a few minutes until they start getting some color.
Then take your breadcrumbs and add them to a small bowl or glass measuring cup. Pour the milk over them and let them sit and absorb the milk.
In a large bowl, add your ground beef, the beaten egg, breadcrumb/milk mixture and eggs. Add salt and pepper to taste. Mix. I just use my hands, but you can use what ever kitchen utensil you usually use.
Place meat mixture into one or two loaf pans. Or you can shape and place in a 9×13 casserole dish.
In a small bowl, mix together the mustard, brown sugar and ketchup glaze. Spread over the top of the meatloaf.
Bake in preheated oven for one hour (60 minutes) or until internal temperature reaches 160 degrees Fahrenheit.

This easy meatloaf is sure to become a family favorite!
Ingredients
Meatloaf
- 2 lbs lean ground beef
- 1 egg, beaten
- 1 onion, chopped
- 1.5 cups milk
- 1.5 cups italian style bread crumbs
- salt and pepper, to taste
- 1 to 2 Tbsp olive oil
Meatloaf Glaze
- 1/4 cup Brown Sugar
- 1/4 cup yellow mustard
- 2/3 cup ketchup
Instructions
- Preheat oven to 350 degrees F. Spray loaf pan(s) with nonstick cooking spray. Set aside.
- Heat olive oil in pan on the stove. Add chopped onions and cook until the onions start turning brown.
- While onions are sauteing, make the meatloaf glaze. Add brown sugar, mustard and ketchup in small bowl and mix until well combined. Set aside.
- In a small bowl or measuring cup, add bread crumbs and milk. Stir to combine.
- In a large bowl, add ground beef, egg, onions and breadcrumb mixture. Mix well.
- Add salt and pepper to taste.
- If making one meatloaf, place meat mixture into pan. If making two loaves, divide the meat mixture in half and make two loaves.
- Pour the glaze over top and bake in oven for 1 hour or until internal temperature reaches 160 degrees fahrenheit.
- Remove from oven and let sit for 5 minutes.
- Enjoy!
